Watermelon Feta Salad

 

This is the opposite of complicated. It's so simple, it's not really a recipe. It's the perfect dish to bring to a summertime gathering. I just served it at our family reunion and was reminded how much people like it.

Ingredients
Half a seedless watermelon, cut into chunks
6-8 oz of crumbled feta (or blue) cheese
Bunch of fresh mint leaves, minced
Balsamic vinegar

Put watermelon chunks, cheese and mint into a large bowl and toss together. Drizzle balsamic over top if desired. You can also add strawberries to this salad if you like.
